I did spend quite a bit of time learning the piano growing up, and I still can't remotely do what he does. 13 or so years with a symphony pianist... Then again, my brain functions in a fairly, shall we say, "unique" sort of way.
I suppose that's what sequencers are for.

Wow that's ridiculously impressive. Did they do it completely on C64 hardware or use some sort of emulation/cheats?

Yes, that one is completely C64. It will run on a stock one.
However, there are some out there that use the REU ram expander, and there is now a Super CPU expansion that uses the 65816 (like in the SNES) as a turbo CPU option. I don't think much is available for it yet, but they ARE making some demos and a couple of games for it right now.
The 65816 is basically a 16 bit 6502 that can run the same code.
I've seen some insane C64 demos lately that I would have puked from awesomeness if I had seen them in the 80s/90s.
